 &lt;li&gt; &lt;p&gt;&lt;span&gt;A tax reduction doesn't create demand.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;It doesn't encourage someone walking through the city after work to choose one restaurant over another.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;It doesn't persuade a couple enjoying a day out to dine when they hadn't planned to.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;It doesn't help an operator fill the eight empty tables sitting unused on a quiet Tuesday evening.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
&lt;/ul&gt; 
&lt;p&gt;&lt;span&gt;Those challenges have existed long before today's VAT debate, and they will continue long after it.&amp;nbsp; &lt;/span&gt;&lt;span&gt;The reality is that hospitality has always been a volume business.&lt;/span&gt;&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;Profitability depends on people walking through the door.&amp;nbsp;&amp;nbsp;&lt;/span&gt;&lt;span&gt;Every additional cover contributes towards rent, wages, utilities and every other fixed cost involved in running a restaurant.&amp;nbsp;&amp;nbsp;&lt;/span&gt;&lt;span&gt;That's why increasing revenue can often have a greater long-term impact than simply reducing costs.&amp;nbsp; &lt;/span&gt;&lt;span&gt;Successful restaurants need both.&lt;/span&gt;&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;A business that consistently attracts more diners becomes more resilient, more profitable and better equipped to deal with rising costs, whatever economic conditions lie ahead.&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;&lt;span&gt;This might seem surprising. Restaurants now have access to online reservations, social media, digital advertising, customer relationship tools and a growing range of hospitality technology. Diners can discover restaurants in seconds, compare reviews instantly and book tables with just a few taps. &lt;/span&gt;&lt;span&gt;Yet empty tables remain stubbornly common.&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;&lt;span&gt;Most startup ideas don't arrive in a boardroom. &lt;/span&gt;&lt;span&gt;ZEZT certainly didn't. &lt;/span&gt;&lt;span&gt;The idea began during evening walks through my local town. &lt;/span&gt;&lt;span&gt;Particularly during the colder months. &lt;/span&gt;&lt;span&gt;Midweek. Midwinter. Around 7 pm.&lt;/span&gt;&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;The high street would still have life. People were walking home from work. Cars were moving through town. Lights were on in the restaurants. &lt;/span&gt;&lt;span&gt;Yet when I looked through the windows, something didn't add up.&lt;/span&gt;&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;Many of the restaurants were only half full. &lt;/span&gt;&lt;span&gt;Some were nearly empty. &lt;/span&gt;&lt;span&gt;These weren't bad businesses. &lt;/span&gt;&lt;span&gt;Far from it.&lt;/span&gt;&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;Many were independent venues built by owners who had invested their life savings, years of effort, and countless hours of hard work into creating something special.&lt;/span&gt;&lt;/p&gt; 
&lt;ul&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;The food was excellent.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;The service was friendly.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;The hygiene ratings were five stars.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;The prices were reasonable.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;The atmosphere was welcoming.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;They had websites.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;They had social media pages.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;They advertised where they could.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;Many had loyal customers and strong word-of-mouth reputations.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
&lt;/ul&gt; 
&lt;p&gt;&lt;span&gt;Yet the tables remained empty. &lt;/span&gt;&lt;span&gt;And I kept asking myself the same question. &lt;/span&gt;&lt;span&gt;Where are the customers?&lt;/span&gt;&lt;/p&gt; 
&lt;h2&gt;&lt;span&gt;A Visibility Problem, Not A Quality Problem&lt;/span&gt;&lt;/h2&gt; 
&lt;p&gt;&lt;span&gt;What struck me most was that many of these restaurants weren't failing because they offered a poor experience. &lt;/span&gt;&lt;span&gt;They were struggling because visibility and demand rarely arrive at the same moment. &lt;/span&gt;&lt;span&gt;A restaurant might have twenty available tables on a Wednesday evening. &lt;/span&gt;&lt;span&gt;Hundreds of potential diners might be within a mile of the venue. &lt;/span&gt;&lt;span&gt;Yet the two never connect.&lt;/span&gt;&lt;/p&gt; 
&lt;ul&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;The restaurant doesn't know who is looking.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;The diner doesn't know what's available.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;Both sides miss the opportunity.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
&lt;/ul&gt; 
&lt;p&gt;&lt;span&gt;The more I observed this, the more obvious the problem became. &lt;/span&gt;&lt;span&gt;Hospitality doesn't have a food problem. &lt;/span&gt;&lt;span&gt;It often has a discovery problem.&lt;/span&gt;&lt;/p&gt; 
&lt;h2&gt;&lt;span&gt;The Problem With The A-Board&lt;/span&gt;&lt;/h2&gt;

&lt;p&gt;&lt;span&gt;Occasionally, I would see a restaurant place an A-board outside.&lt;/span&gt;&lt;/p&gt; 
&lt;p style="font-weight: bold;"&gt;"50% OFF TONIGHT."&lt;/p&gt; 
&lt;p style="font-weight: bold;"&gt;"2 FOR 1 MEALS."&lt;/p&gt; 
&lt;p style="font-weight: bold;"&gt;"HALF PRICE AFTER 6 PM."&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;I understood why.&lt;/span&gt;&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;The owners were trying to create demand. &lt;/span&gt;&lt;span&gt;But it always felt like an imperfect solution. &lt;/span&gt;&lt;span&gt;Not because discounts are wrong. &lt;/span&gt;&lt;span&gt;Because blanket discounts often feel desperate rather than strategic. &lt;/span&gt;&lt;span&gt;A restaurant may only need to fill five extra tables. &lt;/span&gt;&lt;span&gt;Instead, it discounts every table. Customers who would have paid full price receive the discount as well&lt;/span&gt;&lt;span&gt;.&lt;/span&gt;&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;Margins shrink. &lt;/span&gt;&lt;span&gt;The brand can suffer. &lt;/span&gt;&lt;span&gt;And the promotion often reaches only the people walking past the venue. &lt;/span&gt;&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;&lt;/span&gt;&lt;span&gt;There had to be a better way.&lt;/span&gt;&lt;/p&gt; 
&lt;h2&gt;&lt;span&gt;What If Local Dining Worked Like A Marketplace?&lt;/span&gt;&lt;/h2&gt; 
&lt;p&gt;&lt;span&gt;That question stayed with me. &lt;/span&gt;&lt;span&gt;What if restaurants could create targeted opportunities instead of blanket discounts?&lt;/span&gt;&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;What if diners could discover those opportunities in real time? &lt;/span&gt;&lt;span&gt;What if every town had a living marketplace for food and hospitality? &lt;/span&gt;&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;&lt;/span&gt;&lt;span&gt;Imagine a town with ten independent restaurants. &lt;/span&gt;&lt;span&gt;Each venue has different quiet periods. &lt;/span&gt;&lt;span&gt;Different cuisines. &lt;/span&gt;&lt;span&gt;Different audiences. &lt;/span&gt;&lt;span&gt;Different capacity challenges. &lt;/span&gt;&lt;span&gt;One restaurant may need diners between 5 pm and 6 pm. &lt;/span&gt;&lt;span&gt;Another may need help after 8 pm. &lt;/span&gt;&lt;span&gt;A third may simply want to attract new customers who have never visited before.&lt;/span&gt;&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;Instead of shouting into the void, restaurants could create offers that match their exact objectives. &lt;/span&gt;&lt;span&gt;Not desperate discounts.&lt;/span&gt;&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;Smart promotions. &lt;/span&gt;&lt;span&gt;Controlled promotions. &lt;/span&gt;&lt;span&gt;Profitable promotions.&lt;/span&gt;&lt;/p&gt; 
&lt;h2&gt;&lt;span&gt;Where AI Fits In&lt;/span&gt;&lt;/h2&gt; 
&lt;p&gt;&lt;span&gt;This is where the idea evolved beyond a marketplace. &lt;/span&gt;&lt;span&gt;Because modern technology allows us to understand far more than simply whether tables are available. &lt;/span&gt;&lt;span&gt;We can understand context.&lt;/span&gt;&lt;/p&gt; 
&lt;ul&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;Weather.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;Local events.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt;

 &lt;li&gt; &lt;p&gt;&lt;span&gt;Time of day.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;Seasonality.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;Consumer behaviour.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;Availability.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
 &lt;li&gt; &lt;p&gt;&lt;span&gt;Demand signals.&lt;/span&gt;&lt;/p&gt; &lt;/li&gt; 
&lt;/ul&gt; 
&lt;p&gt;&lt;span&gt;The goal isn't for AI to replace hospitality. &lt;/span&gt;&lt;span&gt;The goal is for AI to support it. &lt;/span&gt;&lt;span&gt;Imagine an intelligent system that helps restaurants understand:&lt;/span&gt;&lt;/p&gt; 
&lt;ul&gt; 
 &lt;li&gt;&lt;span&gt;When demand may be weaker.&lt;/span&gt;&lt;/li&gt; 
 &lt;li&gt;&lt;span&gt;When extra capacity is likely.&lt;/span&gt;&lt;/li&gt; 
 &lt;li&gt;&lt;span&gt;Which promotions may work best.&lt;/span&gt;&lt;/li&gt; 
 &lt;li&gt;&lt;span&gt;What level of offer protects profitability.&lt;/span&gt;&lt;/li&gt; 
 &lt;li&gt;&lt;span&gt;When opportunities are likely to emerge.&lt;/span&gt;&lt;/li&gt; 
&lt;/ul&gt; 
&lt;p&gt;&lt;span&gt;The restaurant still makes the decision. &lt;/span&gt;&lt;span&gt;The technology simply provides better information.&lt;/span&gt;&lt;/p&gt;

&lt;/ul&gt; 
&lt;p&gt;&lt;span&gt;When restaurants thrive, communities often thrive with them. &lt;/span&gt;&lt;span&gt;The alternative is a future where more venues disappear, fewer people visit town centres, and dining becomes increasingly detached from local life.&lt;/span&gt;&lt;/p&gt; 
&lt;p&gt;&lt;span&gt;Food delivered from anonymous kitchens may be convenient. &lt;/span&gt;&lt;span&gt;But it doesn't replace the atmosphere of a bustling restaurant. &lt;/span&gt;&lt;span&gt;It doesn't replace the conversations or&lt;/span&gt;&lt;/p&gt;

&lt;h2&gt;&lt;span&gt;Why We Created ZEZT&lt;/span&gt;&lt;/h2&gt; 
&lt;p&gt;&lt;span&gt;ZEZT was born from a simple observation. &lt;/span&gt;&lt;span&gt;Good restaurants shouldn't struggle simply because the right diners never discover them at the right moment. &lt;/span&gt;&lt;span&gt;Technology should help connect local demand with local hospitality.&lt;/span&gt;&lt;/p&gt;

&lt;ul&gt; 
 &lt;li&gt;&lt;span&gt;But what about the customer who wasn't planning to visit?&lt;/span&gt;&lt;/li&gt; 
 &lt;li&gt;&lt;span&gt;What about the office worker leaving work and deciding where to eat on the train home?&lt;/span&gt;&lt;/li&gt; 
 &lt;li&gt;&lt;span&gt;What about the couple strolling through town looking for somewhere appealing?&lt;/span&gt;&lt;/li&gt; 
 &lt;li&gt;&lt;span&gt;What about the family finishing a day of shopping and looking for dinner?&lt;/span&gt;&lt;/li&gt; 
&lt;/ul&gt; 
&lt;p style="line-height: 1.8;"&gt;&lt;span&gt;These diners make up a significant part of hospitality revenue, yet they remain largely invisible to the industry's technology stack.&lt;/span&gt;&lt;/p&gt; 
&lt;p style="line-height: 1.8;"&gt;&lt;span&gt;For many restaurants, a substantial proportion of covers arrive without a reservation. They are impulse decisions, spontaneous choices and last-minute opportunities. They walk through the door, enjoy a meal, pay the bill and leave.&lt;/span&gt;&lt;/p&gt; 
&lt;ul&gt; 
 &lt;li&gt;&lt;span&gt;In many cases, no customer profile is created.&lt;/span&gt;&lt;/li&gt; 
 &lt;li&gt;&lt;span&gt;No email address is captured.&lt;/span&gt;&lt;/li&gt; 
 &lt;li&gt;&lt;span&gt;No phone number is collected.&lt;/span&gt;&lt;/li&gt; 
 &lt;li&gt;&lt;span&gt;No future marketing opportunity exists.&lt;/span&gt;&lt;/li&gt; 
 &lt;li&gt;&lt;span&gt;The relationship begins and ends with the transaction.&lt;/span&gt;&lt;/li&gt; 
&lt;/ul&gt; 
&lt;p style="line-height: 1.8;"&gt;&lt;span&gt;This creates a huge blind spot for restaurants. Operators know how many reservations they receive. They know which channels generated those bookings. They can analyse occupancy, booking patterns and customer behaviour. Yet a large proportion of their revenue often comes from customers they know almost nothing about.&lt;/span&gt;&lt;/p&gt; 
&lt;p style="line-height: 1.8;"&gt;&lt;span&gt;The irony is that these spontaneous diners may represent one of the biggest growth opportunities in hospitality. While the industry has focused heavily on managing reservations, relatively little attention has been given to generating new demand and converting nearby consumers into customers.&lt;/span&gt;&lt;/p&gt; 
&lt;p style="line-height: 1.8;"&gt;&lt;span&gt;This is where the conversation needs to change. The future of hospitality may not be about managing bookings more efficiently. It may be about creating bookings, visits and walk-ins that otherwise would never have happened at all. Because restaurants don't ultimately need reservation systems.&lt;/span&gt;&lt;/p&gt;

&lt;p style="line-height: 1.8;"&gt;&lt;span&gt;In reality, many hospitality businesses don't need transformational change to improve their fortunes. They simply need a few more customers.&lt;/span&gt;&lt;/p&gt; 
&lt;p style="line-height: 1.8;"&gt;&lt;span&gt;Let's assume a restaurant generates an average spend of £35 per cover. If that venue attracts just ten additional covers per week, that's an extra £350 in weekly revenue. Over a year, that's £18,200 before drinks, desserts, repeat visits or referrals are taken into account.&lt;/span&gt;&lt;/p&gt; 
&lt;p style="line-height: 1.8;"&gt;&lt;span&gt;For some restaurants, that may represent the difference between breaking even and generating a healthy profit. The opportunity becomes even more compelling when you consider that most of the fixed costs have already been incurred.&lt;/span&gt;&lt;/p&gt;

The next opportunity may be helping restaurants generate those additional covers in the first place. Because sometimes the difference between survival and profitability isn't hundreds of customers. In reality, reservations are simply a way of organising customers who have already decided to visit. The booking itself isn't the achievement. The customer is. &lt;p style="line-height: 1.8;"&gt;&lt;span&gt;Consider a busy high street on a Thursday evening. Hundreds of people may walk past restaurants. Some are heading home from work. Others are shopping, socialising or looking for somewhere to eat. Many haven't decided where they will dine. Some haven't even decided whether they will dine out at all. This is where the greatest opportunity exists.&lt;/span&gt;&lt;/p&gt; 
&lt;p style="line-height: 1.8;"&gt;&lt;span&gt;Not in managing demand that has already formed. But in creating demand that otherwise may never have existed. The restaurant industry doesn't need another way to organise customers. It needs better ways to generate them. Because every empty table tells the same story.&lt;/span&gt;&lt;/p&gt;

 &lt;li&gt;&lt;span&gt;People leaving work.&lt;/span&gt;&lt;/li&gt; 
 &lt;li&gt;&lt;span&gt;Couples deciding where to eat.&lt;/span&gt;&lt;/li&gt;

&lt;p style="line-height: 1.8;"&gt;&lt;span&gt;Most of these people have not made a reservation. Many have not yet chosen a restaurant. Some may not even have decided whether to eat out at all. Historically, restaurants have had very limited ways of reaching these consumers in real time. They could rely on passing footfall. Perhaps place an A-board outside. Maybe run a social media promotion and hope the right people see it.&lt;/span&gt;&lt;/p&gt; 
&lt;p style="line-height: 1.8;"&gt;&lt;span&gt;But these approaches are largely passive.&lt;/span&gt;&lt;/p&gt;
